Fast and easy egg fried rice makes for a delicious chinese supper. It is a complete meal in itself  but it can also be served as a great accompaniment to any chinese main dish. My family specifically loves egg fried rice with chicken manchurian. It is absolutely a match made in heaven!

Ingredients:

Rice 2 cups (soaked for 30 mins)

Eggs 2  (whisked with a pinch of yellow food color)

Carrot 1 small (julian cut)

Capsicum 1 small (julian cut)

Salt as required

Black pepper 1/2 tsp

Cooking oil 1/3 cup

Method:

Make scrambled eggs in 2 tbs cooking oil in a non stick pan. Take eggs out when done and in the same pan stir fry the veges with a little bit of salt and pepper. after cooking combine with scrambled eggs.

Boil soaked rice in salted water until tender. Drain and mix with the already cooked eggs and veges. Put in 1/2 tsp black pepper and 1/3 cup cooking oil. Mix and leave on low heat with lid on for 5 minutes. Serve hot!

Tip:

You can add any veges of your choice like peas, cabbage, spring onions etc or even some boiled and shredded chicken. Be creative!
